Traditional method

Chrysalide is Maurène's favourite cuvée — and the one that demands the most patience. From grolleau gris planted in 1980 by our grandfather, harvested with lovely acidity, then re-fermented in the bottle in the traditional method and aged 9 months on laths in our cellars. As the chrysalis becomes a butterfly, the still wine becomes fine bubbles.
